Not finding much to link it to Galileo besides the fact that it was found at the time he was alive.
If anyone else is burrowing into the rabbit hole it may be worth going back to check out the Lamp of Galileo in the Duomo of the cathedral the Pisa Griffin sits in.

Galileo is known at least in astronomy for his finding on Nebulas and the Milky Way in particular.
I've got so many loose connections between one or two clues, then some connections between another one or two, but no connecting thread for all of them. I feel like that's the answer, we just need to see how all these pieces fit.
Galileo is most known for discovering:
Earth's Orbit
The Pendulum Effect (the idea that a pendulum swing will always take the same amount of time to finish a swing even as the distance get's shorter as the kinetic force stays the same. Discovered using the lamp in the Duomo of the Cathedral in Pisa, now named after him.)
The Falling Bodies Law (Discovered by him dropping items of varying weight off the top of the leaning tower of Pisa. The law dictates that all bodies fall at an equal rate giving small adjustments to weather conditions and aerodynamics.)
Discovering the Moon has a rough surface.
Four moons around Jupiter (Io, Europa, Ganymede, and Callisto)
The discovery of many more stars, or "invisible stars" the idea that the night sky was full of stars and we just couldn't see some of them. (This is attributed to his works on the milky way and nebulas)
Establishing math as the language of scientific discovery and pioneered the scientific method.
Of these I think the Pendulum effect due to it's link to the lamp in Pisa, the falling bodies due to it's link to the Tower of Pisa, the star discovery, and his four moons are of the most significance due to their relation to astronomy and the telescope in the picture Rob shared with us.
Galileo also observed Neptune (who’s symbol as a planet is the 🔱) but he mistook it for a star, so wasn’t credited with its discovery.

I don’t think he named it at all. It was eventually discovered mathematically by its influence on the orbit of other planets.
I’d say at this point Galileo’s lamp might be the best path, considering it burned incense (ashes). Maybe there’s something about that we’ve missed.
I'm looking at it now too trying to find some link to our other hints.

Yeah I'm gonna start from the Griffin being a mark of the cathedral, to point us at the lamp, and work forward from there. I think the main thing is keeping that first message "Rise from the ashes." Oriri Ex Cinere in mind, they must have sent it thinking we could divine a result from that.

looking at all the clues it seems to first be pointing to the pisa griffin, secondly giving us a hint in the form of a cathedral which points us to the pisa cathedral, and finally back to galileo

I'm digging up more on the lamp and looking over our hints but if anyone wants to dig around the Camposanto Monumentale di Pisa for info I would appreciate it. It's the cloister the original lamp was moved to after the new one took it's place. See if there is any connections to some of the other hints we got. It's also a cemetery so has some connections to death/rebirth/etc.
