Get 2nd Lieutenant with your GC and finish ARR, and you can do the Hunt if you really want. It rewards a different type of currency, and has three tiers per expansion.

no, it's what I did. but you should eventually do your crafter quests up to level 65 for manipulation, that's the only thing you really need that's gated behind quests
it's far easier to complete the doh/dol quests if you max them out first and then go back and do them later

If you don't like it, you can always just pick up another class on the same character. You can ultimately be everything on one character.
You lose no progress in the story, just have to level the class from whatever level it stats at.
