The i130 Ironworks set you buy from Mor Dhona is the only one you should worry about getting, just collect it as you go (weapon first)
You'll be handed poetics by the bushel, but you can always do some poetics roulettes if you feel like you need more Poetics

The only differences between the three Grand Companies are the looks of the equipment and where they're located. 'When can I get my first mount?'

The quest that allows you to use mounts, 'My Little Chocobo' is unlocked by completing the level 20 main story quest 'The Company You Keep'. The quest is located at the Grand Company base you chose and you'll need to buy the Chocobo Issuance from your Grand Company Quartermaster. You can get the 200 needed Grand Company seals by doing the main story quest that comes after 'The Company You Keep'.

'Are there any differences between mounts?'

Some mounts allow multiple people (2/4/8) to ride at once, with all mounts having the same movement speed. A partial exception to this rule is the SDS Fenrir, a mount from the Mog Station. The SDS Fenrir acts as if you have the first mount speed boost obtained from completing specific quests in the story, making it a bit faster than other mounts until completing the relevant story quests for that zone.

'Can I make my mount faster?'

Zones have one or two ranks of mount speed that increase the ground speed of mounts. The first rank comes from completing specific quests in the main scenario quests, with the second rank coming from Riding Maps which are bought with either Allied Seals, Centurio Seals, or Bicolor Gemstones. Mount Speed Boosts do not increase the flying speed of mounts.

Due to the nodes not having a specified level, they don’t count towards any non-diadem achievements

The clouded nodes (the ones with the green materials) might count as a level 80 node for the “Mining Shadowbringers” achievement, but you can finish that vastly faster outside of the diadem
