Each job is its own job, theres no "Cross-class"ing or anything anymore, so what you can do is unlock Black Mage (Thaumaturge) at any time and start leveling that job up as well. Seperate levels!

Practically speaking you can make gear sets but it’s tied to your weapon

Your weapon determines your class essentially

You could opt for leveling* every job at once but it will take a lot longer. Most people take one or two (or a couple more) jobs to level cap with their main scenario, and THEN start working on alts.

'When can I get my first mount?'

The quest that allows you to use mounts, 'My Little Chocobo' is unlocked by completing the level 20 main story quest 'The Company You Keep'. The quest is located at the Grand Company base you chose and you'll need to buy the Chocobo Issuance from your Grand Company Quartermaster. You can get the 200 needed Grand Company seals by doing the main story quest that comes after 'The Company You Keep'.

'Are there any differences between mounts?'

Some mounts allow multiple people (2/4/8) to ride at once, with all mounts having the same movement speed. A partial exception to this rule is the SDS Fenrir, a mount from the Mog Station. The SDS Fenrir acts as if you have the first mount speed boost obtained from completing specific quests in the story, making it a bit faster than other mounts until completing the relevant story quests for that zone.

'Can I make my mount faster?'

Zones have one or two ranks of mount speed that increase the ground speed of mounts. The first rank comes from completing specific quests in the main scenario quests, with the second rank coming from Riding Maps which are bought with either Allied Seals, Centurio Seals, or Bicolor Gemstones. Mount Speed Boosts do not increase the flying speed of mounts.

Your dungeon level goes up while you're in there, yes - but if you do floor 51-60, and you exit, you'll get a bunch of EXP dumped on you the moment you get out. Thats why you do it over and over again, it will level you outside, too

Up to you, lots of it depends on the situation and the severity of the tankbuster. Sheltron has a short/small cooldown, so using it "at will" isnt bad at all.
Note that Sheltron shares gauge cost with Intervention, which is also great to use when you're offtanking (because what else can you do).
