So yeah TL:DR, do your main quests, and most you come across are very helpful and unlock additional content like optional dungeons, all the raids, class quests which you basically have to do, hairdresser unlock, challenge log unlock all very very useful. The main obvious ones you can skip if wanted are the ones that unlock other classes and leves which are very apparent by the name of the quests @hollow mist

GShade is essentially a graphics modification for FFXIV (and a few other games) used to improve the graphics, to be using it you would have to have installed it, sounds like you haven't.

In the inn there is a glamor dresser. As long as you have prisms you can put any item you want into the dresser (must have 100%) repair. From there you can assign items to a glamor plate. Then equip the plate in a main city and voila
