'When can I get my first mount?'

The quest that allows you to use mounts, 'My Little Chocobo' is unlocked by completing the level 20 main story quest 'The Company You Keep'. The quest is located at the Grand Company base you chose and you'll need to buy the Chocobo Issuance from your Grand Company Quartermaster. You can get the 200 needed Grand Company seals by doing the main story quest that comes after 'The Company You Keep'.

'Are there any differences between mounts?'

Besides looks, all mounts are the same speed along with being able to fly. Some mounts allow multiple people to ride at once.

'Can I make my mount faster?'

Zones have one or two ranks of mount speed that increase the ground speed of mounts. The first rank comes from completing specific quests in the main scenario quests, with the second rank coming from Riding Maps which are bought with either Allied Seals, Centurio Seals, or Bicolor Gemstones. Mount Speed Boosts do not increase the flying speed of mounts.

To unlock your class' job you need to be level 30, complete all of your class quests and the main scenario quest 'Sylph Management' (lvl 20 quest) to be able to pick up your job unlock quest. If you want to play music in town like you've probably seen some people do, then go to Mih Khetto Amphitheatre in Old Gridania and accept the quest from Simpkin

you don't have to buy an item, you just have access to them at any time.

I've just explained to Puff how to unlock the ability to play songs. You use an ingame keyboard interface to play the music yourself in real-time.

Oh I’m all lvl 80 I’m just doing it for story

I wish there was an easier way to see procs but as it is I kind of just have to try and keep my buff/status bar in my peripheral vision

Titan's sole purpose is burstier AoE if you have 2 egi assault 2s available, and the shield if you absolutely don't mind sacrificing 600 potency a minute for it
