As for breakpoints, I only know the max that combat retainers need for item level is around 430 currently

nothing that's very accurate. Plus its strongly recommended for new players to go to a preferred server for the road to 70 bonus. Being on a high populated server isn't really that much of a benefit outside of having more free companies to choose from since you can visit other worlds in your data center

There must be a way to get the fish easier than just casting forever until it happens, no?

you can try looking the fish up on a site like Cat Became Hungry or Teamcraft to see what baits/times/weathers have the best chance of catching the fish

there's no real way to force you to get the fish you want, just put the odds a bit more into your favour

so while, there are gathering nodes with restoration materials on it, gatherers can't turn in anything for the restoration scrips

The bait for ocean fishing is purchaseable from the npc on the boat
you can use the versatile lure but generally want to go for specific fish to try and get currents (since more points is better experience)

Not really? There isn't a preferred order to it. Tank spec is not as effective due to how aggro has changed over the years. Pick one you like and it should be fine. Dumping all of the points into a single tree gives you a barding for the bird as well. Although expensive/time consuming, raising your chocobo rank to 20 gives you enough points to max all three trees.

ever since I hit 70 on smn/sch, doing sub-50 classes has been slower, though. I know of the armory bonus, but dungeons used to get 2 levels the first time, and then 1+ after. Now it takes a minimum of 3 to get from one dungeon to the next

What Samutz said isn't impossible, that you had the road to 70 buff which made it go by really fast and then lost it which is why it's taking longer now
