I tried doing some infographic style images with Phoenix and I was VERY impressed with the amount of detail it was able to cope with including the text, not always accurate, but still a nice design and layout

and I keep trying to change the background, have this mug placed on a table, etc but all I'm getting is the freaking mug on a neutral background, with stuff added on the mug itself! (I'm trying the Stock Photography preset with Stock Photo style, PhotoReal on).

I would suggest rewriting the prompt order, keeping the subject details minimal and separated from the background details.
Information is more strongly weighted the closer it is to the beginning of the prompt, so the order can effect outputs.

Start with a base model and preset, then once the prompt is dialed-in and working consistently, then try different model/style preset combinations to see the results.
