In order to be able to effectively help you, we need you to provide clear information to show what the problem is. The exact details needed vary per case, but here is a list of things to consider:

Is the initial upload using foreground/background backups, or using the "share to Immich" thing?
The initial upload was likely done using the cloud icon in the top right corner of the iOS app.

I deleted them from my device, because "expendable", but again, didn't want to lock myself out of the photos forever like that one from yesterday.

These photos were background uploaded, I believe
So in theory, I should be able to download the exact copies, and then just dump them back into the iCloud Photos folder I have on my desktop.
So what I would propose to (try to) duplicate the issue from yesterday:
1.) Download one of those copies from Immich.
2.) Move it back to iCloud.
3.) Delete the copy from Immich.
(?) 4.) Delete Immich trashed copy.
5.) Try to re-upload from phone.
(And honestly? This week has been a NAS/Docker blur for me. It may have even been the day before yesterday.)
What has icloud to do with all of this?
It'll put the photo back into my phone exactly with the same metadata as before

1.) Download the original of one of the photos.
2.) Delete said photo.
3.) Delete photo from trash.
4.) Try to reupload via web interface.
5.) Log after?
Ideally I would do it the first way - because then it would sync the photos back with iCloud and Immich together. In the correct timeline ordering from the metadata.
And I'd get that cloud with the checkmark again?
I tried downloading straight to the phone but the phone app converts the image when you download it. It does the same for GIFs, too.
Downloads exclusively as JPG, and sets time/date to the time/date of your download. Not the og image's time/date.

No, I deleted it initially but it backed up to Immich before deleting phone side

You might be right. I can't remember if the photo the other day was one or not. Both images I'm willing to work with are screengrabs.
But it appeared correctly in the Immich timeline before I deleted it from the Immich server side
So it had a correct time on it initially

So it showed up in order, but only because that was the order it was added to the list. Not because it necessarily had metadata telling it to be there.
The server download seems crisp enough to me, I'm doubtful it changed anything (compressed, etc, whatever) with respect to the photo itself.
Okay, I see what I made you confused about now. Deleting from Immich doesn't delete from the phone. The photo is still in my iOS photo library.
But it does not upload.
Just permanently deleted from trash on the Immich web UI - trying to see if it will upload now
Does not reappear in the Immich iOS app, thus cannot be reuploaded that way.
But can still successfully upload to the web UI. And then it syncs to my phone again.
But no cloud checkmark because the date/time is misaligned again.
