so i'm trying to open the config (i'm on version 1.12.10) and no matter what i type (i tried "/function lunareclipse.watching:config/open_config") and the config did not open whatsoever and just said "Unknown function" or "Can't find functions for" what is the correct command to open the config?

It's just /function #from_the_fog:config. If this command doesn't work be sure to check if you have cheats enabled. If you don't, you can Open To LAN and enable cheats temporarily ^^

Can you try typing /datapack list? This should show you a little list of what's installed, just to be sure ^^

Where'd you put the datapack file?
Some launchers like Modrinth create a datapacks folder in the root, but that one doesn't actually work
be sure to put it in the datapacks folder in your world folder, which can be found in saves ^^
