There are two causes for this error:

  1. You have "Use HTTPS" checked in your local server
  2. Your device cannot reach the server.
    Please uncheck "Use HTTPS" or make sure your device can reach the server.

There's no specific guide for ios because Grasscutter is just server software, and the setup isn't different regardless of you being on iOS, android, pc, etc. You would need your own patched ipa, the game client (not created or provided by anyone here in a long time), to play on iOS for any version newer than 2.7. The old ipas from before the people making them were shut down went up to 4.0. If you want another one, you need to patch the ipa yourself.

You're very confused about what the server is, I think. The server doesn't run on a proxy. Also yes, there are instructions on how to change the server to being hosted on the local network rather than localhost only. They're even linked in the pinned thread. See the attached image.

No and there is no reason to have one. The setup is already generic and for all platforms, and has not changed (except being fewer clicks, ie. the AIOs) since GC released. The quick setup guide is for getting you from 0 to playing in the shortest time. If you want the more verbose guide of the same exact result but set up manually, refer to the wiki.

Official GC is at latest 4.0. Forks go up to 5.4. You can play any version you want as long as you have the appropriately built server and a patched client to match. I make extra emphasis here specifically because you are on iOS.

And one last note

future versions with more stability?
I wish you could understand how funny this is. New versions are less stable, not more stable. If you want more stability, go backwards in versions - not forwards. You can refer to a message such as this one: #1393316665131012169 message or you can search "shuffle" or "deobf" and look at some of the posts regarding proto shuffling and resource/proto deobfuscation requirements each version to get a better idea of why that is the case.

Jeez, sorry if I offended you somehow with any of my misunderstandings…

So just to be sure, I’d need to make this new patch myself? I’m fine playing on 4.0.0 (I’m 100% sure someone archived the 4.0.0 ipa SOMEWHERE). If I’m mistaken and there already IS a patch I can apply, where might it be?

And once I’ve signed and sideloaded it, just… configure my wifi/proxy settings or whatever with Shadowrocket and I’d be good to go?

There is already a public 4.0 ipa, that's what anyone who wants to play on ios has to use unless they make their own. You can find it over on YuukiPS's website or discord. As for a patch you can apply, that's not how ios patching works. You need to actually modify the app and replace the rsa key. Any other changes required, such as if an ssl bypass was needed, then that would also be something you would need to do in the ipa itself. I'm not an ios developer, and as mentioned above essentially nobody does anything with ios here, so you would be mostly on your own for anything regarding ipa modification.
