the boss would probably be bowser, and can shoot flames to protect itsself maybe other koopalings too

A Deka Kuribo, I just watch the players stomp and stomp, then I go there run up and take the last Kuribo for my self

The way I'd do my boss stage is have the boss be an option rather than the main concept
Beating the boss awards you with 3 stars, but you can also go for stars
Beating the boss will take around the same amount of time for 3 stars in total to spawn
That way, players have a choice for going for the boss or going for stars
Bosses being used in a good way are smash stages because, they can help, but they're not the main way of scoring points
Star Chasers does a better job at some sort of concept thingy, with a green demon, though I will admit the execution is a bit Dame. Because the green demon noms all your stars if it catches you
I think a map where there’s one sole boss could work, but maybe just as more of an obstacle than a target
Like if there was a hypothetical castle map with an invincible bowser running around
