i could see yoshi being implemented later as a mount so this wouldn’t really make sense

Yoshi would kinda be OP, without the flutterjump and tongue it would feel a bit weird tho. A mount as Ryan said would work better

What if Yoshi throws you in an upward angle instead? (And also, allow you to wall jump if you collide with a wall after being thrown)
This would mean that throwing people into a pit would require you to calculate the trajectory instead of mindlessly throwing someone into a pit like the ice flower

Yoshi's characteristics
-Flutter jump: Additional jump that allows you to go further, however, it will slow you down horizontally
-Tongue: You can swallow opponents, they can mash out of the grab. When being thrown, they will go in a parabolic trajectory instead of being thrown immediately downwards, they can also mash out of the throw animation
-Dismount: You can dismount Yoshi by using the powerup command button, gaining vertical momentum
-Forced dismount: An opponent can be forced out of Yoshi be being hit by any regular hitbox, the opponent will receive the corresponding knockback and hitstun, Yoshi will run away
-Swallowing projectiles: Yoshi can swallow enemies, he can also swallow and spit back Fire and Ice balls (Like in nsmbw, maybe making the projectile slower and making it despawn within 3 seconds). This would mean that engaging in combat against a Fire or Ice flower would result in a high risk high reward situation that would also make the opponent strategize how to use his powerup against Yoshi, also, both flowers can throw two projectiles at the same time, meaning that if you throw two projectiles at Yoshi, he could only swallow one of them and would be forced to evade the other one
-Tongue cooldown: Yoshi will have a cooldown after spitting out an opponent or projectile

Also, a personal idea of mine
Instead of having regular Yoshis appear, baby Yoshis will spawn from a Yoshi egg, you can feed it coins, power ups, enemies and projectiles
After having consumed 10 things, the baby Yoshi will grow into a regular Yoshi, similar to SMW
The baby Yoshis would also have a small cooldown for swallowing, for balance purposes of course (Of course this can be discarded)

It is pointless to throw opponents around if the probabilities to throw them into a pit are fundamentally low unlike using an ice flower
And it would also add strategy to using Yoshi
Your main means of attacks would basically be counters I guess

There is a lot of counter-play that the opponent has to take in account
"My opponent is riding a Yoshi and will grab me to prevent me for getting the star?"
"I will shoot an iceball backwards so that, if they grab me, the iceball will still hit them, forcing them to dismount Yoshi and freezing them in place, giving me an strategical advantage. And, if they swallow the iceball instead, they will have no means to stop me from grabbing the star since they will be in cooldown from spitting out the iceball/will have their Yoshi's mouth full"
"I will propel in the air so that they can not reach me, then hover over the star to prevent them from immediately getting it, best case scenario I grab the star and disengage, worst case scenario I grab the star, get swallowed and thrown aside and disengage"
"I will crouch under my opponent and avoid them since I picked up a mini mushroom against my will for the third time in the match"
"I will bounce of a wall unpredictably to take my opponent by surprise and hit them"
"I have mega mushroom, you can not eat me"
"I have a star, try to eat me"
"I can shoot a fireball towards my opponent, that will force them to leave me alone"
