Every time I record the track goes on mute by itself after I'm done recording it, making it to where I have to manually unmute it

You might be in loop recording mode. Toggle this button off in the top toolbar if so.

Or if you want to keep that on you can also turn on blend recording and it won't mute the clips but then you'll have to manually mute when you do multiple takes.
