when i change the volume then play the audio it resets to its original volume position

You have recorded yourself moving the knob with the record button

#

This is stored in whatever pattern you have selected, right click the volume slider > edit events > use the delete tool to delete the automation you recorded

Right click the record button and uncheck automation
