#EMF Enderman Head Rendering

Issue is probably just that it's the default head model
You probably have to make a custom one
This is known, I have no idea why atm, and it's not a huge priority :/

Im using Porkier Piglins x Fresh Animations and encountered a similar issue, not sure if this is also fixable from EMF so i leave it here
Actually 🤓 it was an issue of the Fresh Animations pack itself, well not an issue because having the bones this away allows the Fresh Animations author to syncronize complex animations in all the body. The way the bones are rigged. In the enderman.jem in the deafult head and headwear (the ones that supplementaries used to use to render the enderman head which no longer does when the author notice it too) they had no cubes and the enderman head and headwear were nested inside the body bone. So it wasn't fault of both EMF or Supplementaries.
Once this got clear. The supplementaries author deployed an update which made the enderman head have its own model (that means it will no longer be compatible with normal enderman custom models) and the last thing missing were the eyes which can be put again with this pack :vvv
