Those are all the ones I remember.

Route 66 was the Deadlock Gang robbing a train (as seen in Reunion, except there Cassidy interrupts them)
Gibraltar is Winston launching his comms satellite so he can initiate the Recall
Dorado is delivering a power core to the power plant so it can come online
Ilios is archaological sites that Talon is involved with
Temple of Anubis is where the Anubis AI is being quarantined

they're not all things that canonically happened though

There is stuff to suggest both directions are true

Characters like Ashe inexplicably knowing his name is Cole in OW2 suggests its a retcon

But there is also currently no lore or rerecordings of story from before New Blood that uses the name Cole Cassidy

They instead opted to just remove everything from the game instead

It can go both ways, but we will know for sure when they eventually release a new piece of media with him in the past.

If they avoid mentioning him by name ever, then Jesse McCree was a fake name

If they call him Cole, well... Then its explicitly a retcon.

Overlord is the most unique and interesting.
Casino is the most interesting from a story perspective. (At least until they dropped the ball on Monte Carlo.)
King has a signature weapon that is also distinctly Korean.
D.Mon is the most popular but otherwise generic.

she did meet with Cassidy though and told him to recruit new heroes to join Overwatch

she and Soldier also met with Mercy briefly, and Ana's conversation with her convinced Mercy to go back to Overwatch
