That's not plot armor. Most heroes can deal with it because Bastions are not that powerful to begin with, relative to many of the threats that Overwatch deals with

36 is a lot. But most of the heroes are above their level by a significant margin

Doomfist is no exception being the one to cause that reaction

He defeated around a dozen OR15s, which are much more powerful than Bastions

Cassidy and Zarya both have also been shown to destroy platoons of Bastions

Off the top of my head, the heroes In not confident can do that are Bastion, Brigitte, Mei, Zenyatta, and Lucio.

Bastions are just stationary sentient miniguns

It's also worth mentioning that the crisis era heroes likely had to destroy hundreds if not thousands of them

I'm taking the ability at face value here, but frankly, I see no reason not too.

When Echo duplicates a weapon, she dosen't just create a hardlight version of it, she creates a functionly identical copy with the same properties.

We can gather that Echo can use molecular duplication to create mechanisms and materials identical to that of the target. Hense the name of the ability, "Duplicate"

Part of Echo's story is that after Dr Liao died she was locked away because she was considered to be too dangerous. I find this easy to believe considering a machine that can copy any weapon or inteligence system has the potential to be the most dangerous thing on the planet.
