it can be very irritating when a vassal takes a tile that ruins your plans, allowing you to retake it should be very nice feature >)

Should be good, because actually the only way is to declare war on your vassal, then during war annex its region, and after war vassalize it again.

100% agreed. Vassals need more options to interact. In fact, I think I would advocate giving them the whole diplomacy interface so people could actually fight to sway them against their current ruler, and make them more interesting in general.
