Just remember though, datapack are not plugins, so I won't be able to recreate everything, some things may just need to be cut short

the currency is a item i put in the chest (anything) 1.21.11 the main page is the chest gui where you put the items and the sub is the villager gui where you buy the stuff

ive made something like this before, but the version i uploaded online is not complete.. i added new features after uploading it.. so.. the only place where is currently obtainable is on my pateron.. im way too busy with other projects and jam to finish the next version now.. if you want you can take the version from pateron.. it has all of the features that you said you need.. there could be a datapack somewhere online for free that does things that you need.. there used to be a version of it on vanilla tweaks (with a lot less features than mine) but idk if its still there.. you can go and check and see if it suits you.. if you can wait some time i will relace my full version later (or if i have a good reason to work on it now i could finish it faster)
