I've started a server a couple weeks ago, and i thought i had added Amplified Nether and Nullscape from the start, but the nether and the end are vanilla.
Maybe i added them after generating the world, maybe not, but whatever happened, i didn't realise until a week in.
Now, i've decided to reset the nether and the end so they can generate with the mods, but apparently just deleting DIM1 and DIM-1 doesn't do anything, they generate vanilla with the same seed.
What is it I have to do?

It sounds like you just don't have the data packs installed correctly. Deleting those folders would indeed reset them and make them generate new chunks with them otherwise

i'm using the mod files, should I try dowloading the datapacks then?
(those datapacks have a mod version)

Presumably either is fine, you just may not have the mods installed correctly then

tho, i just installed them like any other mod
Anyway, things changed for the worse. I was doing other stuff in the server and in the meanwhile i decided to remove the two mods. The nether works perfectly. The end does not exist

So, I reinstalled the Nullscape mod and now the end exists
but wtfrick is this where are the pillars
and anyway the rest of the end doesnt look like the mod's
at this point i guess i have to wait for an answer in the mod's discord (they havent responded yet)

I'm not really sure what to tell you. Probably best to get support in the Stardust discord.
If they're installed correctly then they just work--no additional steps required. It may be a quirk of your server software or some conflict with your server software
