Unfortunately villager trades aren't data-driven, so you can't like remove specific trades by editing Json files like you could do with loot tables or enchantments.

You would have to execute functions as villagers to check their data and see if they have one of those trades, and then replace it, which is doable and not especially hard, but can be performance intensive
