You'd be overwriting the vanilla enchantment files in your data pack in minecraft/enchantment
any tutorial that teach that?
It's not really something sophisticated enough to require a tutorial

The folder should be enchantment, not enchantments
And make sure minecraft is in the data folder, not in your namespace folder
After that you just
- Copy the vanilla enchantment files from the vanilla data pack at that file location into the same file location in your data pack
- Change the max level to what you want
where can i find the vanilla data pack
Inside the jar file in your .minecraft folder
Alternatively this repository also has all the vanilla data pack files in the same folder structure
