the easiest way is

to just make the item display ride them

in terms of being directional

that is not something that i am aware of being seamlessly possible

best you can do is grab their rotation and apply it with very little interpolation

but either way it should still be riding them to track potion

unfortunately i will say theres no way to make that happen seamlessly

because chickens freely rotate their heads on 2 axes, and making it ride them would not center it on their head

They can. That method would usually have it be a whole mob model teleported to the invisible mob, rather than riding on it and trying to align to its head

I thought there was a way to do it with an entity riding
