AFAIK not even possible with optifine... I tried to do this before. (It may be possible with some datapack magic maybe? I think I've seen stuff like this before but not just with resourcepacks)

I might be able to do custom model data for an item and apply that item to one of my armor slots

for that (equipping the item) you could use a carved pumpkin but thats only applicable for adventure maps since you need to remove the texture in your face and make it non-placeable

Adding a right click functionality to a fake helmet item that equips it to the head slot isn't very hard

And you can decide if you want to duplicate the head item that was originally there before it gets overwritten, or just make it not work if they're already wearing a helmet

But yeah for the other armor slots there's not a lot of great options

If this is something you want to do we can make increasingly worse suggestions on approach, but I would recommend just changing your plans on this one. There's lots of stuff that becomes easier to ideate as you get more familiar with data pack limitations, because you get better at ignoring what you know can't be done well or at all
