So first of all: Character design.
Shit made a full 180 from Genshin onwards. Designs are far better, character models are far better, animations are far better, they're much more polished, yare yare yare
Then we have general level design
Boy I doubt you've actually even done the tutorial quest if you can't see the massive improvements in level design.
Let's not even drag Genshin (an OPEN WORLD) into this and instead look at stuff like HSR. You must be blind to not see the massive improvements there. HI3 has some of the worst level design I've ever seen in a video game. This kinda stopped with "A post Honkai Odyssey" but only because it was more "open" than the average story level.
If we look at some of HI3's "more open" areas, like the one's to do bounty quests in, you can see they're lacking in quite literally every aspect.
Saying they didn't improve massively, when they did, is crazy.
There's also simpler things like graphics, general animation, cutscenes, music, and what not
