If a laptop, I'd look for Clevo and Tongfang rebrands. If you can't find one with discrete graphics (probably won't be able to), then the Ryzen APU suggestion still remains.

I'm mostly looking at this from a for Tower of Fantasy front / assuming that's the goal.
When you go integrated graphics, another requirement is that the system has over 8GB of RAM, since you're sharing system memory for video-memory.
So, let's say a bare minimum of 12, which is higher than the minimum requirements otherwise.
^ This should be doable for that price point, without a discrete graphics card. Though a discrete is very rare (only personally seen one sub 600$ as a Tongfang Walmart rebrand).
So -- Ryzen APU, 12+GB of RAM. Last piece of advice is to look at the processor naming convention.
Try to avoid anything with a "U" at the end of the naming.
The "U" series chips are designed for ultra mobility / ultrabook class systems, and low power. Low power translates to low performance vs the higher power counterparts.

Yeah, their "restore" process didn't quite work.
A base image was restored, lacking special setup that the OEM performed.
Including partition expansion.
You could re-expand the drive manually I'm sure (get the partition back to its prior size), under Windows' Disk Management.
However, I'd talk to the OEM / manufacturer at this point-- since the machine as you put it "reset itself".
That obviously should not happen.
Or put another way -- "they" wiped your data. Something they either misconfigured, or something otherwise went wrong on their provided software install. They need to make that right.

Nor do I. Booting from Storage Spaces is like said, "abnormal".
That's not defacto installer stock-supported as a config option for Windows.
Generally Storage Spaces is mutually exclusive and not shared on a boot volume.

It's very difficult to say 'what' they've done to their image. What was loaded on the machine is not a standard Windows copy -- I suspect it's heavily altered with a custom volume setup, and unknown other changes.

Right, whenever everything was 'reset' as you put it, and you lost your drivers, a Windows Update provided copy was acquired. You likely don't have the Adrenaline CP installed.

I don't know the specific type of 'key' that the system was activated with. However, if it was activated via KMS or volume licensing, then you might not be able to directly upgrade the copy to a retain key.
Best way to figure that out is to take it to the store and ask them.
