If you have a regular diamond earring or necklace equipped, and try to "swap" it for an enchanted diamond earring or necklace, the enchanted jewelry joins the stack and the enchantments disappear.

Possibly related this is the fact that you can have an entire stack of jewelry equipped instead of just one, although I am not sure how to reproduce that bug.
I have also seen my loadout switch from enchanted to non-enchanted, which makes the situation above more common.
The first time it happened, I wasn't really sure what happened, but the second time this happened to me, it was very clear and obvious what happened.

Well, not sure if this is the result of a different bug or this is what happened when you tried to fix the original post, but this definitely 100% happened just now with no user error on my part... my wife wasn't using the Diamond Precision Ring or the Diamond Marksman Bracelet yet, so I purchased the diamond symbols from the player's market and created them to mail to her. I had my own Enchanted Diamond Precision Ring and Enchanted Diamond Marksman Bracelet in my inventory, and apparently there is a stacking issue between enchanted an non-enchanted versions, and the new ones poofed... sort of annoying I wasted the ~1M gold to purchase the symbols, but could be worse.
TL/DR: if you have an enchanted diamond marksman bracelet (or similar item) in your inventory and try to make a new diamond marksman bracelet, the new one disappears from your inventory and poofs
