I had possibly the best bahn mis ive ever had a couple days ago
The pork was so juicy 🤤
The veggies were fragrant. And the bread had an unbelievable crunch when you bit into it
I just made THE BEST chicken fajitas I've ever made. Legit just took some leftover chicken, shredded it up and put it in a pan with a little water and home made taco seasoning. Seared that up after the water absorbed into the meat and then did some very thin onion, jalapeno, and green pepper in the same pan but on high heat to get some char going on it. Cooked till limp and added a little of the seasoning to that.
Shredded some colby jack off a brick and put that in the pan to melt and become crispy. As it started to bubble and turn brown on the edges I laid in a tortilla and let the cheese adhere to it. Turned that out onto a plate and assembled my masterpiece.
A little fresh onion on top with some sour cream and after I folded it I folded next. It was so good I basically fent folded on the spot lol.

If anything they probably don't recommend eating more because they have a lot of natural sugars in them
They're very sweet so they pack a lot of calories. 4 clementines is probably like 300-400 calories. A small meal but due to the sugar in it triggering an insulin response you're hungry again in 10 minutes.

Now...it's still spaghetti so unless you used Ragu sauce, which is just ketchup basically, it's probably still a solid 6/10 with those meatballs.

I got you fam. Lemme give you what I do to do a wallop of flavor on jarred sauces
So first thing is you need a yellow onion, a couple fresh cloves of garlic, black pepper (if it's not fresh ground use white pepper instead or just skip. Do not use pre-ground if it isn't white pepper.), half of a green cubanelle pepper if you can get it OR a half of a green bell pepper if you can't, a few fresh basil leaves if you can get them and some extra virgin olive oil. Optionally 1lb of ground beef OR 1/2lb ground beef and 1/2lb of ground sweet Italian sausage. 1 or 2 jars of your sauce. 1 if not using meat, 2 if using meat.
If you're not using the meat skip this part. If you are using it fry them down in the in the sauce pan on a medium-high heat until the beef is nicely browned and the sausage gets some nice color. If you aren't that experienced in cooking and want to see how to brown meat well check out J Kenji Lopez Alt's recipe for chili. He cooks down ground beef perfectly in that video. (if your sauce pan is very small do the meat in two batches.) As the meat cooks you should be using a spatula to break up the meat as small as you can. I'd salt and pepper the beef but you don't have to salt and pepper the sausage it should be flavorful as is. Drain meat of fat before setting aside for later. Leave the brown bits in the bottom of the pan, that fond will be great flavor.
First thing for the sauce itself is dice the onion and the cubanelle/green pepper small. Add the onion and the olive oil (about a tablespoon) to the sauce pan, hold the peppers back this will be added later. If you used meat make sure to get up all the fond on the bottom of the pan while the onions cook. Great flavor in there.
Cook the onion on medium-low heat, salt the onions if you can but only a pinch or two of salt. Make sure they do not develop much color. You're sweating them and getting them to look transparent. While doing this make sure you peel and finely chop the garlic but keep an eye on those onions. Once the onions look like they might be developing some color (caramelizing) add in the garlic and stir that around. You'll get a huge wave of garlic smell that should be heavenly. Let that get fragrant for about a minute.
Once the garlic is done cooking (remember, about 1 minute) then add the jar(s) of your sauce. Now is also the time to add in the diced peppers and the meat, if you're using the meat, as well as the basil and ground black pepper (as much as you like but if you want an amount do 1/2 tsp). Turn the heat to low, stir and simmer for at least 20 minutes. Stirring every 3-5 minutes. You are trying to make sure it all mixes well and also trying not to burn the sauce on the bottom of the pot. And really thats it. Make sure the peppers are nice and soft and it's done! It gets better as it sits so personally I turn the heat down as low as I can and let it sit warm for a little while before I use it.
Now just take your noodles and plate them up with the sauce. NEVER pre-mix the sauce and the noodles. Only sauce the noodles when they are going to be put on a plate or in a bowl. Even keep the separated as leftovers.
If you want to do meatballs please, for the love of God, bake them or pan fry them before pairing with the spaghetti. Never let your meatballs swim and cook in the sauce.
Side note: this sauce freezes great so you can make a large amount of it and freeze servings of it to thaw and have whenever! Though it will lose some flavor over time.

Also for spicy Italian I personally would not. I'm not opposed to it being spicy, in fact if you wanted it that way you can add some red pepper flakes for some heat.
But sweet Italian and hot/spicy Italian sausage use different ingredients in the sausage. I don't think it'd taste right if you used hot sausage.
Cubanelle aren't spicy. They are like a better green bell pepper.

You could use some of those. They would work well, but only in combination with the other peppers as they lack the punch in flavor we're looking for. I'd only use them for heat tbh.

But yeah that's all you need really
It's more or less just chop everything and add it at the proper layer in the sauce. Layer as in layer of flavor. What you are doing when you make a sauce like this is building flavors like bricks to a building. Every layer, every brick, builds flavor
If you didn't cook the onions before adding them to the sauce they would get lost and contribute nothing. If you added the garlic without letting it's aromatics out in the pan they too would be lost. Muted.
The peppers impart their flavor slowly with cooking but adding them at the same time as the onion would change them. Imo when you cook them with onions and oil they kind of take on this (wonderful) flavor that you would probably associate with fajitas more than spaghetti.
Also: I like my onions and peppers to be present in my sauce when I eat it so I just dice them. You could chop them smaller, almost mince them, if you don't like a chunky sauce.
What does the olive oil add?
It's a subtle flavor. Mostly it's a tool to cook the onion. If you really get down to the details of what it adds: not much.
HOWEVER! It's a travesty to use anything but olive oil in spaghetti. Disrespectful.
I use it for that reason but also because its healthier than vegetable, canola, and other seed oils. If you're going to use an oil that's not olive oil I would personally recommend avocado. Otherwise just use butter.

Some cookie recipes call for a margarine because it leads to a crispier texture in a cookie. Also in cornmeal cookies it's higher water content over butter allows the cornmeal to hydrate easier and make a softer cookie.

Extra virgin is processed less and has more flavor but can't be used to cook at higher heats. In this case its perfectly fine but imo with everything else going on the delicate flavor of olive oil will get lost.
If you ever want to get the idea of how much the flavor changes from "olive oil" to "extra virgin olive oil" get a loaf of Italian or French bread and pour some of the oils into dipping dishes. Tear off a hunk of bread and try the normal olive oil. Then try the extra virgin. It's a world of difference.

Honestly cheese is hard to really say. Some people like vastly different cheeses.
Oh well that's a little easier
So for the spaghetti you definitely want fresh parmesean or romano cheese. Or both. But not too much, you can add like maybe 1/4 cup of finely shredded of either of those to your spaghetti sauce and it would not go wrong. That said you are adding a totally different flavor and are getting closer to a bolognese than a spaghetti. Buuut shredding it on top is always a solid option too.
If eating cheese with bread: I'd choose something a little younger and creamier like a coulommier or brie.
That, to note, should not be cooked. It should be spread on the bread or toast of that bread.
If you want to pair a cheese like that to cook onto it and make, say, cheese garlic bread I very much recommend havarti or gruyere

Either or. Personally I wouldn't add it to the sauce as it would add a salty funk that would be amazing but not what I look for in a spaghetti.
If I'm to do cheese with spaghetti I always put it on top after it's been plated up to serve.

Nothing wrong with it if it's homemade, but I would instantly associate that with industrial bread or bad bakery if I bought one and it turned out like that. Classic italian breads like ciabatta or focaccia have way better crumb. The one in the picture looks too compact (not enough hydration)

I was so pissed. The Walmart I go to had a crab apple tree out back and around it used to sprout goldenrod nearby and raspberry bushes. Used to pick them every year in the fall. Then for some fucking reason they chopped it down and the whole area now lies fallow, just grass and the stump. Also chopped down the slippery elm which was the shade tree at the back of the lot. I'll never forgive them for that. They weren't even doing anything with the area, they just chopped and fucked off.

Home-made Greek yogurt, about 1.7 L of it. This time I added 100 g of low-fat powdered milk to 4 L of low-fat ultra-pasteurized milk, then it was time for the bacteria starter culture (I used something between 100 and 300 mg of Streptococcus thermophilus and Lactobacillus bulgaricus combo by Chr. Hansen). After about 12 hours of fermentation in my multicooker I strained the whey in 3 batches (not all fits into the plastic holder with the cloth), each took about 8 hours.
It isn’t time-consuming actually. I make it so often that describing it is more laborious at this point. The most annoying part is not even cleaning (cloth goes to the washing machine, everything else to the dishwasher) but opening the milk cartons.
I eat it sweetened: I add stevia powder and maybe 30 g of chia seeds per portion.
Chicken legs, potatoes, an onion, ½ of a carrot, black pepper powder, paprika, sea salt. I forgot to add a bit of extra virgin olive oil, so it wasn't even fat.

The recipe calls for carrot but I didn't have any so I subbed in orange bell pepper. It was very sweet just like carrot but that was definitely a different flavor. Also it has no potato, rice, or beans (which I've seen in several recipes for steak and ale) because I'm trying to keep it low carbohydrate. So far low carb as lost me over 50lbs/25-ish kilos. This was a pie-filling recipe but I used 1/3 as much corn starch for thickening to make it more stoup/stew-like.
If I were not concerned with carbohydrate content I'd have added the full 3 tsp of corn starch needed and served it over mashed potatoes. That'd make it so very thick and gravy-like it'd have been sublime.

As it stands this small pot of stew was between 15-20 carbs. Divided in two servings it made for a great meal at only 10-ish carbs. It was definitely worth the 1 hour time it took to cook.

I just got into that, 1st one didn't cook trough 100% but like 90 - ish (I ate it, and got shits only from the 2nd half), 2nd recipe was supposed to make total of 3 loafs, but one of the doughs, messed up in the end I used it to make pan bread, the other 2 loafs did not turn out quite right when it comes to size but they cooked trough nicely and werent that bad
Too much sugar in them to have as a snacc on this diet though
but the 1st recipe bread tasted waaay better, so I will stick to that and try to perfect it

Baking is one of the few things in cooking where it's a real science. The ratios must be right or you might end up with a not-great-end-product. I'll look for my no-knead bread recipe when I'm in the kitchen next and send it to you. It's called a "peasant loaf" and it's not as crusty or chewey as other loaves but it's easy to do and makes a great bread for sandwiches and toasting.
It also makes a great gift for people you like

I had some recently that I made for my friends Iftaar celebration (a Muslim holiday I'm unfamiliar with in the middle of Ramadan) and it was like arriving at Heaven's gates. Superbly chewy and positively delicious. I adapted a pizza dough recipe to make bread and brushed it with an olive oil I infused with salt, oregano, thyme, and parsley.

Olive oil isn't that bad. Depending on where you are, I guess. Here in the US we're looking at like 12 USD per small-ish bottle of organic extra virgin. It's pricy but not that bad as long as you don't use it for everything you cook.
