It's a matter of logistics. Tibanna gas for blasters is cheap, lightweight, fits almost every blaster in the galaxy, and holds a lot more shots for the weight than conventional bullets.

Most people will also never want or need to fight a Force user so the advantages of physical ammunition against them is a pretty niche thing
