Easiest way is to turn an inserter so it can't load resources in to the machine.

Once a machine has insufficient materials it switches off until filled with resources again

An inserter for a machine, a conveyor belt for that entire line

Ie, if you have 10 machines making mech parts, turn the iron or copper ingot belt backwards and it quickly stops running
