I cooked, pork chops and mashed potatoes
Seasoned and then seared it in a pan with some light olive oil for 5 minutes on each side, at medium-high heat

Also the wings were grilled, and smothered with 2 different flavors, one was a spicy honey barbecue, and the other was a garlic parm (unfortunately I didn’t get to eat much of the bbq one because my roommate devoured most of them, but the parm one was better so it’s fine)
I made a lasagne yesterday
Forgot to post some of my meals for the past couple days
Smoked salmon bagel (ignore the fact I used to bottom buns), and Cajun flounder with homemade parm cream
Some food from a pub (I ate the steak before getting a good photo, it was too lovely)

i just found out that blue apron puts all their resapiecs for free on the internet, time to borrow my sisters cosco card and create a banger meal plan

i wanted to make my own pho and other asian soups and like the broth is like a 14 hour adventure
It is, but it’s so god damn worth it
Just have the broth made in the morning, so while you’re doing things, it’ll be simmering for X amount of time
Just have to check on it once or twice
Boil some briskets and bone marrow while clearing scum and rinsing, simmer while adding onions and a bunch of spices, remove brisket after 3 hours so it's just bone marrow, then strain
Kept it nice and simple
That’s how you do it tho good shit
Some recommendations if you didn’t do it here, charr your veggies by throwing in the oven and setting to broil on top rack
Also star anise and peppercorns but lightly toasted in a pan
Helps bring out some lovely flavors

Very slowly cooked salmon and pasta, put cream on top of salmon in the last moments, herbs and vegetables. Mix the cream with the vegetables and the herbs in the same pan as the salmon with a fork and there you have it

Yeah if you’re not using a nonstick pan it just loosens the shit off of it
Doesn’t matter as much if you use a nonstick tho (but ideally you want to use a wok which means you would have to)
Also yes you can, do note tho that tuna cooks way quicker than steak does, and it’s even more unforgiving than steak as well
But yeah I cook my tuna very similar to my steak, where I butter braise it with butter, garlic, rosemary, thyme, and with the addition of a lemon wheel (and it’s juices)
That is if I want tuna as a main dish with like spinach and potatoes on the side or something

Yes
Make a sauce for it, and cook it like you would steak, so either on a grill or butter braise it with garlic thyme and parsley
Your goal is to get rid of the gaminess of it as much as possible, and the best ways to do that is via the smoke from the grill, butter braising it with those aromatic herbs, and a sauce strong enough to cover it, but not the flavors of the deer
The sauce I normally make is a berry sauce where you do wild berries, cognac (can also substitute with rum or whiskey), heavy cream, and some aromatic herbs to let simmer into the sauce like basil, parsley, and thyme
Hope this helps, and if you have any questions don’t be afraid to ask
OH and take a shower once you finish it, because that gamy smell will be on you, and can affect the taste of the food

Cajun potato soup
Ingredients are:
1 lbs of bacon
2 lbs of smoked sausage
1 stick of butter
1 1/2 onions
2 spoons of minced garlic
1/2 cup of all purpose flour
10 potatoes
48 oz of chicken broth
1 cup heavy whipping cream
3 cups whole milk
Garlic powder
Onion powder
Cajun seasoning
Black pepper
Dried parsley
Salt
1/2 cup green onion
Steps:
Cut the bacon into strips
Cut the sausage into pieces width wise
Cut the potatoes into cubes
Dice the onions
Dice the Green Onions
Put the bacon and sausage pieces into the pot you're gonna be making the rest of the soup in
Once that's cooked take the sausage and bacon out, you can remove some of the grease left behind, but you want at least a little bit left in the pot
Put the stick of butter in the pot
Add the 1 and a half diced onions
Add the two spoons of mined garlic
Put the 1/2 cup of All purpose flour in the pot
Add the 10 cubed potatoes
Add 48 oz of chicken broth
Add 1 cup heavy whipping cream
Add the three cups milk
Throw in the seasonings
Once the potatoes have softened a bit mash them up
Now add the diced Green Onions
Add your cooked meats back into the soup
Stir it all together and let it stew a little
Makes like 10 servings

Sure it’s pretty simple really, really all you gotta do is add mince jalapeños and bacon and add it to the ground beef. Really make sure the peppers and bacon are really small so that you’ll have an easier time combining it into the beef. Once combined, throw it onto the pan and cook it to medium high heat

Steak with garlic mashed potatoes, hunters sauce, and veg medley. Steak was overcooked a bit.

1 qt brown sauce (1 qt beef stock, 1/4 lb of brown roux)
4 oz minced shallot
1 c tomato puree
1 c sliced mushrooms
2 oz small diced celery
2 oz small diced carrot
1/2 c white wine
Salt and pepper to taste
Procedure:
- in a medium sauce pan over medium heat, add a small amount of canola oil. Then sweat the shallot, carrot, and celery.
- when veggies are tender, add mushrooms and cook until tender.
- add tomato puree and white wine and bring to a simmer and reduce by half.
- when reduced by half ass brown sauce and season to taste.
- let simmer until desired thickness.
can you sub veggie stock for the beef stock?

Also a vegan Reuben and pepper salad I made for a final. Knife work was sloppy as I was pressed for time but it wasn't bad.
Also also pork tenderloin, pan sauce, risotto, and asparagus. Made this for a different final. The plating was ass but overall chef said I did really well and I'm happy with it.
