Best way to a solid defense in kof is to block high/low until one of 3 happens:

1. The string ends and you can throw out a fast light to interrupt them
2. They throw out an unsafe move that you can get a punish combo from
3. They're trying to go for resets, so you spend a bar either GC or Blowback

The main key though is patience. If you get impatient and try to throw something out or jump out when it's not your turn, you're gonna get smacked
