So on the plus side, most fighters in this game play the same way. I was playing my brother today, and I hadn't labbed Mai at all, but once I figured out a setup I could exploit I was able to create openings and do some good damage that way.
In the matchup here, my main goal was to setup a blockstring with Sylvie and then work an opening from there. Terry, that seemed to work super well for for you as well. So maybe there's a way you can leverage that for Joe as well

The big thing is to hit the jump-ins as low as possible to get the largest possible hitstun or blockstun.
I get thrown out of a lot of jump-ins if I do them too high in Ranked because the hitstun frame advantage runs out.

But repetition made me a bit bolder when attempting it
It paid off since my jump-ins would either be too low for air-to-airs and too high for jump-ins confirms though
And now I kinda differentiate between the two in approaches (defensive j.CDs and j.As coming out early in jumps, offense oriented j.CDs, j.Ds, and crossups j.Cs coming out later)
