I'll admit, I was basing that off of an autopilot system...How does it work IRL?

In short, depending on the implementation, some of them have what is called Auto Release which works similar to what you describe.

Here is a snippet from the manual regarding testing the auto release with this particular autopilot, the ST5000 Plus
