I haven't heard of any mod allowing to do so, that being said if you play without vsync and with uncapped fps it shouldn't actually cap at 60, as far as I know. Steam launch options allow to bypass the incorrect resolution detection (like in this post, but using higher numbers instead), but I never got good results regarding the framerate

by never got good results do you mean good fps/visual quality on a macbook
i'm extremely confident that hardware limitations isn't the cause
I mean that using steam launch options never got the game to actually display "@120" in the options (except in some rare cases that only happened in windowed mode), unlike the resolution that did increase to what I wanted, with a visible difference. I believe the issue might come from the version of unity the game uses, which just doesn't properly detect the monitor's specs on recent macs (and since they're more recent than the game we can't really blame unity for that).
So in the end, I got a good resolution but the framerate has always been stuck in a weird situation where no setting felt ideal, vsync being too low, the framerate cap felt inconsistent, and no cap causes the game to eat a lot of performance. I personally switch between them depending on the feeling, that has never prevented me from playing although that's not ideal. There's also the fact that recent macs are using a different chip architecture than what the game was built for, which doesn't help.
If you want to edit the value at which the cap is set you can change the value in a file named Config.ini. First, do this:
Then right click the app's icon and select "show content", then go to the Contents folder, you'll find the file there
