The rest of the struts in the prop guards are structural. You removed 4/5 of the necessary elements that held it together.

My best guess is that it's flexing so much that the FC is getting completely useless sensor data

well if flew fine when i removed the stuff, but then i took it apart to remove some hot glue, and when u reassembled it i had to fix some esc issues, and i’m pretty sure i fixed it and now this

Can u see all transmitter channels in BF app working correctly/full range, and they correspond to the quad controls, eg throttle? Looks like throttle is not associated to any input channel.. and yaw seems to be scaled down by a factor. Is there any curves defined on ur transmitter?
