The left one looks better to me imo, although the legs are a little too fancy for what the helmet is, personally I'd find some grieves that also match the material on the helmet. One set of legs I think would work well would be the vulgar militia, it's just the knee guards but could fit nicely with the simpler look you've got

I use Quality and then use the incantation blood flame blade, my off hand weapon which is the back hand blade has the blood affinity so you can proc blood with milady + BFB then finish off with the Backhand

Quality affinity is usually the best in my opinion, raises the hell out of stats and most affinities you can get from incantations although they build a lot differently and are not as powerful the quality affinity still gives it that boost for when your in a boss you can’t necessarily proc BFB for.

Then again it’s loosely based on the weapon you’re using, sometimes I use Heavy or Occult depending on the stats

Yeah just put cragblade ash of war either on the spear or the hand weapons I showed you, it does great poise damage and it puts rocks around the weapon so I think that will fit the earth element pretty good especially because in ATLA earth benders used rock fists multiple times in the anime

That said, I'd change the leggings if you want suggestions, probably something cloth or leather since there's not really any leggings that match the metal/texture/whatever of the Ronin shoulder pad or Malformed Dragon Gauntlets
