Ye blood infusion works better with dex. If u got some larval tears i would try out 80 arcane with occult infusions. Its fun and also that way u can use dragon communion seal and cast incantations with 303 incant scaling (and thats without lvling faith at all)

unequip the torch and the sword (maybe the helmet if you need to) so you get to a medium load. Just use the katana, since you're going for a very high dex build. If you want to do holy dmg (since y'know, you're a confessor) while also applying bleed and scaling with dex, you could put the sacred art on a morning star or nightraider's flail

What do you mean by difficulty? Does the enemy AI get smarter or harder from NG+1 to +7 or does just the health and damage increase? And then does +7 onwards have no increases in health and damage?

AI doesn't change at all. NG+ increases enemy/boss health and damage output, and also the number of runes that they drop. That's all. But because you keep your levels, weapons, armour, etc, you'll actually find NG+1 to be a lot easier than the main game. It doesn't usually start getting harder until +2, or even +3

Yes, both correct. NG+ is exactly the same game, just with scaled enemy health, damage and runes, and that scaling stops at NG+7. NG+8 and onwards are identical to +7
