Should I just switch to Bloodhound, I've been using that weapon for almost the entire playthrough and I like it. It feels like I'm putting too much into Dex with Morgott's sword.

morgott's sword is a dex weapon, there's no point to use it if you don't wanna do dex. bloodhound step is powerful but its up to you what ash you like using

dual wielding can be fun but it raises your endurance needs and takes a lot more stamina as well, you should try it and see if you like it. those stats are good but you should get enough arcane to cast scarlet breath probably instead of some mind

ah i think whats happening is just input loading, your next cast is being loading into the input but its making the cast sounds a bit too early and it overlaps

that works on a solo cast to you just need to time the 3/4ths cast time

Hmm hard to say but it sounds more like a bug than anything intended. easiest way is to check damage of full cast vs 3/4ths against an enemy. I prefer using the lyendell knight below artists shack in liurnia as my test dummy

It starts under that ruined "bridge" with the jellyfish, go past that and keep running towards the Murkwater cave and you'll be invaded, kill that guy, then go back under the ruined bridge and you'll see the ronin guy there, talk to him, then go to the lake he tells you to avoid (which is the lake you'll walk into if you just keep walking down the map, past the murkwater cave), and kill the dragon.

After that, go to the ruins at the bottom right of the pic, he'll be there, talk to him, then after this you go to Lucaria academy, past the sealed gate, and you'll find a red sign to invade someone--do that, then... I think after that you go to the church of marika in Altus Plateau and find him there again.

Manulou is his name. He keeps standing there, afk, not moving, not able to take any damage, just attracting invasions.
I've only seen it happen once, with this guy, but I've been summoned to his world 6 TIMES now. 4 times as an invader, twice as a hunter. AAAAH

How do you get that weapon on the right and what's it called?

Kill the last boss (campaign-wise) and get it from the remembrance--Sacred Relic Sword, same goes with the weapon on the left, Marika's hammer.

If you mean the top image then you have to climb on top of Gransax's giant spear in the capital, before certain "events" take place--looks just like the weapon, which is called Bolt of Gransax.

To be fair, parrying in this game is harder.
If you're a souls vet, or played DS3 you're used to parrying late. Elden Ring wants you to parry EARLY which is something we had to hard wire into our monke brains to prevent doing.
Muscle memory and instinct is hard to break so forgive players if they suck at parrying
