You're balancing too many stats at the same time, take mind down to 15 or lower tbh, endurance minimum to medium roll, strength to minimum requirements to use your sword two handed, Dexterity to minimum requirements, to hold your sword, put the rest of your excess stats into faith and make the sword have flame art or sacred affinity

Not with flame art. Flame art is faith based scaling you get more damage putting stats into faith. I suggest getting a larvae tear and respec to these stats:
60 vigor
11 mind
28 Endurance
24 strength
12 dexterity
7 intelligence
80 Faith
8 arcane

At this point this has to just be a skill issue, I had very similar stats to you and was doing 10k damage with pest threads at rl120 something and the only major difference is I had 2 faithful flock canvas talismans and buffed with flame grant me strength and golden vow
