I think it's pretty normal / a good tip for improving your drawing - to kinda block out or sketch or something the finished piece before you start doing stuff like final coloring or detailing

Yes Harnischtfechten is a more historical by the book type of combat compared to Buhurt which is just pure chaos.

I could point you towards a smith, be warned it is an expensive interest and one that requires you to do your homework on history and weapons/armors used during certain periods.

My current commission is a gothic bevor, while its ugly now, it will be better to look at after the shaping is done.

I have done a bit of research on armour and weapons. I know like different types of helmets and all, and different weapons and how to use them pretty well, but not brilliantly well

Yes, one on one duels, score oriented similar to fencing but a round may use different weapons, poleaxe, zweihander, and even just a basic straightsword.
I prefer the Zweihander, you can definitely taste the goth swinging it.
