The thing I hate most about her is that you can launch an attack while she is recovering from a stagger.

But she will then H-frame through it. Start and launch the Waterfowl attack. Before your original attack animation even finishes. Giving you no time to dodge.

I wouldn't say you have to have a specific build, people have beat her with fists at RL1, it's just a boss that punishes slower playstyles, which is something that the game encourages throughout the entire game up until this particular boss. Also renders shield builds completely unusable

I think it would have been better going against Elden Beast then you go to Radagon, like you've gotten past the erdtree itself now to fell the ruler to open the place for your throne. Radagons fight was bother funner and more impactful for me, fighting elden beast was just like "who is this mf and why does he keep sprinting away"
