There are different damagelevels or levels of hitstun
The one that poleblade does is low enough that she can still use certain moves, namely her kick and waterfowl dance, out of the stunlock which causes her to be less consistent
The damagelevel dealt by giant hunt has no such issue, she is pancaked to the floor and incapable of doing any move, then its 2 attacks and she's staggered where she still cannot do any moves

There is no definitive answer for the best build in the game. You can quite literally beat the game with literally every single weapon in the game. I would recommend experimenting with different kinds of weapons and make a build around the one you would probably enjoy the most.
