Here. I'll tell you how I like to think about the likely intended ways of combat in the FS catalog. (For the games I've played, specifically)

Ds1: Roll at the appropriate times, punish accordingly. Don't get greedy.

Ds2: Positioning is key. Only roll when absolutely necessary. Punish accordingly.

Ds3: Utilize your L2 ability, as there are many skills to choose from. Roll when needed, but panic rolling is somewhat forgiven here.

ER: Parry when you can. Get quick attacks in the moments of respite. Status proc's are key. Roll when needed.

NR: Get a build for the run started. Mold your run based on what you get at first. Choose appropriate buffs for your play style.

Ds2 has a lower levelling soul requirement. To get to level 100 in ds1, you need roughly 1.5 million. As is the case in ds3.
Similar to ER, Ds2 has a far lower requirement of souls. At only 700k required to get to level 100

I have a holy build fighting a Ghostflame dragon and normally with such a build it should be relatively easy to beat him,the damage and range of that dragon

I was always scared of going for the head and kept missing attacks but I learned to just lock in
