From what ive seen others do. You can use your own hosted mqtt. And use diy maps like liams map. And graphana to see sensors data. The mapp also see sensors data. Not sure if thays what you looking for.

To be more specific, an open source project with similar use case (or setup) and good documentation would be perfect for future references.

https://github.com/liamcottle/meshtastic-map for the diy map. You can have this take information from own hosted mqtt lise mosquitto.
Can all be run off a raspberry pi 5 if needed
