If you want to vertically invest you can invest in generic support cons, furina nahida c2 (c3 furina) are just generically good choices, sometimes maybe kazuha c2, if you have a favourite DPS I would look to probably pick up their signature weapon when it's on a banner you dont hate losing on, if you want to vertically invest into a main dps

Main dps cons vary in quality a lot, some have valuable cons, some kind of don't get much in their early cons

characters should be 80/90 at least for the most part, with going to 90 being more recommended for characters that do transformative reactions, Hp scalers or have another extra benefit from being 90 - as for talents relevant talents should go to lvl 9, crowning characters is up to you since crowns of insight are a finite resource

Guaranteed upgrades are good to go for, artifact farming can take weeks and months for any progress at all

You'd generally want to get most characters to at least 80/90 and level relevant talents to 6+ or 9 depending on the talent
After that, some characters benefit from 90 more than others (in some cases it's quite a big difference)
You usually prioritize guaranteed upgrades like talents/levels since getting good artifacts is very RNG and after a certain point the return on investment can be minimal to null

Less invested builds than that can definitely clear abyss depending on the player/abyss/etc. but that's

In a reverse melt ganyu team, consisting of ganyu Xiangling sucrose and Bennett im facing the problem of getting interrupted by enemies while charging ganyus charge attack. I don’t have my sucrose built or upgraded yet so I want to swap her out for a shielded.

Would dionas shield suffice for taking heavy hits and making it more bearable to play ganyus charge attack?

The main use of sucrose is just to group the enemies as far as I know so she’s the first to swap out im assuming

you can but it's expected to lose dmg. zhongli can avoid that compromise, while layla will do much better in shielding your ganyu (but also lose out dmg when you cut off that 4pc vv)
