to answer your original question, I don't think there is an objective best ganyu team without zhongli. melt, mono-cryo and freeze are all good in the right situations and performance can vary depending on investment

Assuming you don't use Diona's burst (I don't think kazuha's pyro absorption is enough pyro application alone), she also provides tenacity buff. layla's personal damage is higher than diona's but if you're playing layla in a team without many buffs her personal damage is not very high anyway
