Interruption resistance is such a good QoL that you feel incentivised to roll more for constellations for it

Firstly, an important question: do you care about Spiral Abyss, Imaginarium Theatre and Stygian Onslaught?
Stygian is hardcore endgame territory, so you'd be right in not wanting to aim for the highest difficulties. Still, you need at least three functional teams to beat it (and it's the kind of endgame mode that heavily rewards meta slaves).
Imaginarium Theatre requires a shit ton of characters. This is the horizontal investment mode.
The Abyss is more forgiving than those two, imho, but it requires skill and really strong builds to breeze through it. At least two teams with good synergistic units.
Dumping all of your primogems on a single unit would make her overpowered, sure, but that's only going to help you on a single front.
