What about the Resource Hub? Jer Junkman could literally ask you for specific resources to bring to him for an extra buck.
I find it quite important that these tasks shouldn't be boring, like "bring me x amount of y resources," unless it fits the character's role (like Jer Junkman or Mike the Miner) and should feel a little personal. Let the world thrive, and let the characters have connections.
Let the Telescope Girl have a quest in which you have to get her a meteor core, but she is completely scamming you or just asking for less money to tell you when the next meteor arrives.
I could go on and on, but I really just want the quests to have meaning, be enjoyable, and somewhat give us something to do.
Remember, things don't need a purpose; they need to be fun and entertaining for players to enjoy doing them. And the best part is that quests are easily extendable. Have one of the storekeepers lose their pet in the river, and they give you something if you can find it. Maybe you could get some side quest like "You surely saw those goblins around too, right? I'm not crazy, am I? GET RID OF THEM. Maybe I can get you something in return, BUT MAKE THEM GO AWAY."
